Sweet and Spicy Caramelized Bacon
Talk about bar food, this is the ultimate! I’ve been trying to work out how to make the perfect caramelized bacon ever since my sister introduced cooking bacon in the oven to me. For those of you who have never cooked your morning bacon in the oven you don’t know what you’re missing! The fat becomes crisp and caramely without the splattery mess. By adding a few ingredients, plain bacon becomes a smoky and sticky treat that is too good to miss!
1 pound thick cut bacon
¼ cup packed brown sugar
2 teaspoons dejon mustard
1 tablespoon freshly cracked black pepper
1/2 teaspoon of salt
2 tablespoons of pure maple syrup
½ teaspoon chili powder
½ teaspoon paprika
Preheat your oven to 350°. Next, combine all the ingredients in a bowl and mix well.
Then add your bacon, I find it’s easier if you cut the bacon strips in half before you add them to the rub. Be sure you’re using thick cut bacon, I’ve tried it with the thin stuff and it tends to fall apart too easy. Once your bacon is nicely coated place them on a wire rack over an aluminum covered cookie sheet, this makes for much faster cleanup.
Lastly, pop them in the oven for 35 to 40 minutes. The bacon should be a nice dark brown but not burnt. Once out of the oven let the bacon cool for 5 minutes then remove from the rack before they stick. Serve at room temperature.
