Wake Me Up Lemon and Blueberry Muffins


As some of you may already know my sister Ashley had twin boys about a month ago. What I haven’t told you is that my other sister Nichole is pregnant with her second child and guess what, It’s a boy! Her first is a boy too, he is almost three with red hair and blue eyes what a cutie!


Anyway, Nichole lives in Austin Texas with her husband and son so we don’t see each other as much as we would like. But when the twins were born Nichole flew over to Vegas to see them. She is seven months pregnant so while she was in town my mom, sister and I decided to throw her a surprise baby shower! We decided to make brunch style food so I of course volunteered to make the dessert, muffin style! It was also my job to get her out of the house long enough for them to set up and have the guests arrive. So I made these fabulous Wake Me Up Lemon and Blueberry Muffins the night before to have them ready for the party.


3 1/2 cups all-purpose flour

4 1/2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon kosher salt

1 1/2 cups granulated sugar

1 teaspoon vanilla extract

2 cups buttermilk

1 stick unsalted butter, melted

 The zest and juice of 2 lemons

2 extra-large eggs

1 pint of fresh blueberries

For The Glaze

The zest and juice of 2 lemons

1 ½ cups of powdered sugar


First set your oven to 350º. Then sift all your dry ingredients together and set aside. Next take about two tablespoons of the dry ingredients and toss it with the blueberries in a small bowl. This will help prevent the berries from sinking to the bottom of the batter later on.


Now using a whisk mix all of your wet ingredients together. It’s better to mix this by hand to help ensure that you do not over mix the batter, no one wants to eat a tough muffin! Once all the wet ingredients are mixed add the dry ingredients a third at a time and remember DON’T OVER MIXED!  Now fold in your blueberries using a spatula. Then simply spoon the batter into a muffin tin with paper liners and bake for 15 to 17 minutes. This will make about 24 muffins. Once the muffins are done set them on a cooling rack while you mix up the glaze. For the glaze just whisk the lemon zest and juice with the powdered sugar and spoon over the muffins.


And there you have it sweet, blueberry, lemony goodness!

The baby shower was a lot of fun with friend, family members and a new baby on the way my family will continue to grow and really how much sweeter can that get?
