Nutty Chunky Chocolate Cookies
It’s that time of year again it’s cookie season! Like most of you I’m sure, I have made my fair share of cookies. Like these lovely Iced Lemon and Almond Crunch Cookies I posted a little while ago. But it looks like my baking itch still has not been satisfied so I wanted to whip up these chocolate delights. After all, tis the season to be cookie craze! These Nutty Chunky Chocolate Cookies, no I couldn’t think of a shorter name 😉 are basically a twist the chocolate chip cookie but way more fun! I came up with these to combine all the things I love about cookies; crunchy nuts, rich chocolate and little something chewy and tart.
2 sticks unsalted butter, room temperature
1 cup brown sugar, packed
1 cup granulated sugar
2 teaspoons pure vanilla extract
2 extra-large eggs, room temperature
2/3 cup unsweetened coco powder
3 cups flour
1 teaspoon instant coffee
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup dried cranberries
1 ½ cups walnuts, copped
1 cup chocolate chips
Makes about 24 cookies
First, set your oven to 350º then cream the butter, white and brown sugar together until light and fluffy. Next add the vanilla, eggs, instant coffee and whip some more.
Then sift the flour, coco powder, baking soda and salt together and add this to the butter and sugar one third at a time. Mix together till just combined.
Finally drop in your nuts, chocolate chips and cranberries then use a spatula to fold all this together. It takes a little elbow grease to get it all in but I know you can do it!
Now all that’s left is to roll the dough into balls and plop them on a parchment lined cookie sheet. With these cookies I always think the bigger the better! Bake them for 12 to 14 minutes and serve them up right with a glass of milk.
I would say these babies are definitely Cookie Monster ready!
