Orange Scented Crepes



So guess what I learned to make over Christmas crepes! I made my first attempt at a crepe cake for dessert this last Christmas. One thing I learned is that crepe cakes do not transfer well 😉 The car ride to my mom’s house was smooth but I still arrived with the top half of my cake sliding off! I did manage to push the whole thing back together and it still tasted great but I wanted to try crepes again so I made these orange scented ones with strawberries for breakfast for my family a few days after Christmas. They were a welcome light treat after all the heavy holiday food we had eaten the last week or so. These babies were a definite successes with no transport mishaps. I will be attempting a crepe cake again sometime soon so keep an eye out!


1 1/2 cups all-purpose flour

2 tablespoons light brown sugar, packed

3/4 teaspoon kosher salt

2 teaspoons orange zest

2 1/2 cups whole milk

6 large eggs

4 ounces butter, browned

For the Filling

1 pint strawberries, quartered

 3 tablespoons sugar

2 tablespoon fresh orange juice

2 teaspoons orange zest

8 oz mascarpone cheese

Honey for drizzling


First let’s start with the filling. Toss the sugar, strawberries, orange zest and orange juice together and then set aside to mulled together.


Now in a small sauce pot on low heat brown your butter. Be sure to keep an eye on it so it doesn’t burn it should smell nutty and delusions when it’s done. Then mix the crepe batter together, use a whisk to mix the flour, brown sugar, salt, orange zest, milk, eggs and brown butter together.


Now in a medium size fry pan on medium/high heat coat the pan in a little butter and spoon about 3 to 4 ounces of the batter in and swirl it about so it is nice and thin. (if you are using a non-stick pan you may not need the butter) Let the crepe cook for about 2 to 3 minutes check the bottom to see if it’s nice and brown if it is flip it over and let it cook another 2 to 3 minutes. Repeat this until you have used all the batter.


Now all that’s left is to assemble your crepe breakfast. Simply spread some mascarpone cheese on your crepe then spoon over the strawberries, fold the crepe over and drizzle over a little honey and enjoy!


You know crepes may seem fancy but they are really just a glorified pancake and you absolutely do not need a crepe pan to make these perfectly light, thin and totally perfect!
