Strawberry Cheesecake Bites

What could be sweeter than a new baby girl getting ready to come into this world? This past Sunday my fiancé Ryan and I attended a baby shower celebrating the upcoming arrival of a baby girl named Athena. The shower was mainly Filipino guest so along with all the fun baby games there was of course an abundance of food with plenty of leftovers for every guest to take home. Ryan and I took home three plate fulls 😉 I of course wanted to add to the feast so I made these simple strawberry cheesecake bites. A fresh tart strawberry filled with sweet cream cheese frosting sounds just right to help rejoicing in the coming of baby Athena.

Lately it seems as if all around me my friends and family members are starting families of their own. I suppose it is the season of life that we have fallen into. Ryan and I will be married this April and we cannot wait to take the next step in our lives together.

Ingredients

8 oz cream cheese at room temperature

 1 and ½ sticks unsalted butter at room temperature

The zest of 2 lemons

½ teaspoon vanilla extract

 1 and ½ cups powdered sugar

3 pints of strawberries

Instructions

First mix the frosting together. Start by whipping the butter and cream cheese together until nice and creamy. Then add your powdered sugar a little at a time and mix this together until light and fluffy. Finally add the vanilla extract and lemon zest and mix this in. Set this aside while you prep your strawberries.

Give all the berries a good scrub and cut the bottoms off so they sit up nice and straight. Then cut a plus sign (+) about ¾ of the way through the top of the strawberries. This is where you are going to pump the frosting inside the strawberry so be sure to not cut all the way through. Once all your strawberries are cut and ready, scoop the frosting into a piping bag with a round tip. Now gently insert the tip of the piping bag into the strawberry and pipe the frosting in.

I like to display them in mini muffin paper liners just to make them extra cute! Enjoy 🙂
