Greek Inspired Grilled Chicken Wraps

Summer time equals grilling time! But here in Vegas it really isn’t safe to venture outside until the sun has gone down. The long hot summer days leave you feeling drained and in need of  little night time pick me up. The last thing your want after a scorching hot day is to end it with a heavy meal. This time of year is all about fresh summer fruit, salads, grilled meat and chilled white wine. When my new husband comes home from a hard hot weekday all he and I really want for dinner is something light and refreshing. These Greek inspired chicken wraps are just the thing we want! So I change our little back yard into our own Greek patio!

Ingredients

For the chicken

1 chicken breast

½ cup balsamic vinegar

¼ cup olive oil

4 garlic cloves, minced

A big pinch of salt and pepper

For the wraps

2 large flower tortillas, I used spinach but whatever you have will work

1 bag of lettuce greens

1/4 cup hummus

¼ of a red onion, thinly sliced

¼ cup Kalamata olives, sliced in half

1/3 cup cherry tomatoes, quartered

½ cucumber, sliced thin

1/3 cup fete cheese

Balsamic vinegar and olive oil for drizzling

Makes 2 wraps

Instructions

Start by cutting your chicken length wise so that you have two thinner pieces then marinating the chicken. In a bowl place the chicken, garlic, balsamic vinegar, olive oil, salt and pepper. Toss this together cover it and place in the fridge for at least one hour.

Once the chicken is marinated place it on a medium heat grill for about 5 minutes per side. When your chicken is cooked set them aside to rest.

Meanwhile you can start building your wrap. First lets place the tortillas on the grill to warm them up a bit and give them a nice char flavor.

Next, lay your tortilla down and spread the hummus over the middle, top with the lettuce, tomato, onion, cucumber and olives. Slice your chicken and add it to the wrap. Finally top with a drizzle of olive oil and vinegar and crumble over the cheese.

This really is just the thing for a light dinner. A glass of chilled pinot grigio in one hand and this wrap in the other is the perfect way to end your weekday.

  1. This looks so good to me! I love Greek flavors. Living in Arizona, we are wanting light food in the summer, too. I like that you put the tortillas on the grill. What a great idea for even more flavor! Thanks for sharing your recipe.
